  • 8 oz cream cheese softened to room temperature
  • 1/4 cup granulated sugar

  • 2 tbsp sour cream
  • 2 medium Granny Smith apples peeled and diced
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 6 burrito-size flour tortillas
  • q.s. vegetable oil for frying

  • In a skillet, melt butter and cook diced apples with brown sugar, cinnamon, nutmeg, and lemon juice until tender.
  • Let the apple mixture cool completely.
  • Combine two tablespoons of cream cheese filling with two tablespoons of cooled apple mixture for each chimichanga.
  • Place the filling in the center of a tortilla and fold it like a burrito.
  • Seal the seam with a flour-water paste or beaten egg white.
  • Heat vegetable oil to 350°F for frying.
  • Fry each chimichanga seam-side down for about four to five minutes until golden brown.
  • Immediately roll in the cinnamon sugar mixture after frying.
  • Serve hot with vanilla ice cream, caramel sauce, and whipped cream.

Notes

Ensure that your tortillas are fresh and pliable to avoid cracking during folding. If you’re looking for variations, try adding chocolate chips to the filling or using different fruits like raspberries or strawberries. These come out best when served immediately after frying, yet they can be frozen pre-fried and cooked straight from the freezer. Be cautious with the frying temperature; too hot or too cold can lead to undesired textures. Use a thermometer for best results.
