Ingredients

  • 1 cup unsweetened applesauce
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, whisk together the applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • In another bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just incorporated.
  • If using, fold in the walnuts.
  • Pour the batter into the prepared pan and smooth the top with a spatula.
  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let it rest for about 10 minutes to cool before slicing.

Notes

For added flavor, sprinkle turbinado sugar on top before baking for a crunchy crust. Store the cake wrapped tightly at room temperature for up to 3 days; refrigerate for up to a week or freeze for up to 3 months. Reheat slices in the microwave for 10–15 seconds to restore moistness. For a gluten-free version, substitute the all-purpose flour with gluten-free flour.
