Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)

Instructions

  • Preheat your oven to 400°F (200°C) and spray a baking sheet with nonstick cooking spray.
  • In a medium bowl, whisk together flour, baking powder, salt, and cinnamon until well combined.
  • In a large bowl, whisk the melted butter and sugar until combined, then whisk in the egg, vanilla extract, and applesauce until smooth.
  • Add dry ingredients to wet ingredients and stir until just combined, then gently fold in diced apples.
  • Scoop out 1 tablespoon portions of batter and drop onto the prepared baking sheet, spacing them a few inches apart.
  • Bake for 10 minutes, until fritter bites are golden and set.
  • While baking, prepare the glaze by whisking powdered sugar and apple cider or juice until thin and pourable.
  • Brush some glaze over the warm fritter bites and broil under high heat for 2-4 minutes until caramelized, rotating the pan frequently.
  • Remove from the oven and brush remaining glaze over the tops; let sit for about 15 minutes for the glaze to set.

Notes

For an extra burst of flavor, add a pinch of nutmeg or a dash of allspice to the batter. Apples are delicious and packed with fiber; they add moisture and natural sweetness to the fritters.
