Ingredients

  • 1 roll Puff pastry
  • 2 Red apples
  • 30 g Butter
  • 60 g Powdered sugar
  • 50 g Almond powder
  • 1/2 Yellow lemon

Instructions

  • Cut the butter into small pieces and place in a bowl.
  • Wash the apples, cut them in half lengthwise, and remove the cores. Slice them into very thin strips.
  • In a pot, boil 40 cl of water with 2 tablespoons of sugar and the juice of half a lemon.
  • Add the apple slices to the boiling syrup and let them soften for about 2 minutes, then drain and set aside.
  • In another bowl, mix 30 g of sugar and the almond powder with the butter pieces until well combined.
  • Unroll the puff pastry and cut it into strips about 6 cm wide.
  • Spread the butter-almond mixture onto each strip, leaving about 1 cm of free dough at one end.
  • Arrange the apple slices on top, overlapping them slightly.
  • Fold the bottom of the dough over the base of the apples, then start rolling up the strip, tightening as you go.
  • Place the rolled-up Apple Puff Roses in muffin molds, tucking the ends under.
  • Bake in a preheated oven at 180°C (or 350°F) for about 30 minutes or until golden brown.
  • Let them cool before serving.

Notes

For a luxurious touch, brush the Apple Puff Roses with apricot jam before baking for a glossy finish. Feel free to experiment with different types of apples for varying flavors, and consider using spices like cinnamon or nutmeg in place of almond powder. Store cooled pastries in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven before serving for the best texture.
