  • Greased 9x13-inch baking dish
  • Kitchen knife or pastry cutter
  • Pastry brush

Ingredients

  • 1 cup whole milk warmed to 110°F
  • 1/4 cup granulated sugar
  • 2 tsp active dry yeast (1 packet)
  • 1/2 cup mashed ripe bananas (about 1-2 bananas)
  • 1 large egg room temperature
  • 1/3 cup unsalted butter melted
  • 1/2 tsp salt
  • 4-4.5 cups all-purpose flour
  • 6 tbsp unsalted butter softened
  • 1 cup packed brown sugar
  • 1 tbsp ground cinnamon
  • 1-2 medium bananas thinly sliced
  • 8 oz cream cheese softened
  • 1/3 cup unsalted butter softened
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 1/2 tsp ground cinnamon for frosting

Instructions

  • In a bowl, combine warm milk and granulated sugar; sprinkle yeast on top and let sit for 10 minutes until foamy.
  • Add mashed bananas, egg, melted butter, and salt to the yeast mixture; mix well.
  • Gradually incorporate flour until a soft dough forms; knead for about 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, until doubled in size.
  • In a small bowl, mix softened butter, brown sugar, and cinnamon for the filling; set aside.
  • Punch down the risen dough, roll it out on a floured surface into a 12x18 inch rectangle.
  • Spread cinnamon-sugar butter evenly over the dough and arrange thin banana slices on top.
  • Starting from the long edge, tightly roll up the dough into a log; slice the log into 12 equal pieces.
  • Place rolls into a greased 9x13 inch baking dish, cover, and let rise for 30-45 minutes until puffy.
  • Preheat the oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden brown.
  • While the rolls bake, beat cream cheese and butter until smooth, then add powdered sugar, vanilla extract, and cinnamon; mix until creamy.
  • Let rolls cool slightly after baking, then spread cream cheese frosting on top and serve warm.

Notes

For an extra special touch, sprinkle some chopped walnuts or pecans over the filling before rolling the dough.
