Ingredients

  • 2 cups mashed ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sour cream or Greek yogurt
  • 8 oz cream cheese
  • 1/2 cup unsalted butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk for frosting
  • q.s. sliced nuts or bananas for garnish
  • q.s. drizzle of caramel sauce for garnish

Instructions

  • Preheat your oven to 175C (350F) and grease or line a 9x13-inch pan.
  • In a large bowl, cream the butter, granulated sugar, and brown sugar until fluffy.
  • Add the eggs one at a time, followed by the vanilla extract and mashed bananas.
  • In another bowl, mix the flour, baking powder, baking soda, and salt.
  • Add the dry ingredients to the wet mixture little by little, avoiding overmixing.
  • Stir in the sour cream until you get a smooth dough.
  • Pour the batter into the prepared pan and bake for 30-35 minutes.
  • Let the cake cool completely before frosting.
  • Beat the cream cheese and butter until smooth and creamy.
  • Add the powdered sugar, vanilla, and milk to the frosting mixture.
  • Cover the cooled cake with the glaze and garnish as desired.

Notes

Make sure your bananas are very ripe for the best flavor and moisture. Don’t overmix the batter to keep the cake light and fluffy. Chill the frosting for a few minutes if it seems too soft before applying it to the cake. For added flavor, toast the nuts before garnishing the cake. Store in an airtight container; good for 3 days at room temperature or 5 days in the refrigerator. For longer storage, wrap slices in plastic wrap and freeze them.
