- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 3 ripe bananas, mashed
- 1/2 cup chopped walnuts
- 1/2 cup white chocolate chips
- 2 cups creamy custard or vanilla cream for filling and topping
- 1 banana, sliced for garnish
- 1/4 cup whole or halved walnuts for garnish
Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking soda, and salt, then set aside.
In a large mixing bowl, cream together the butter and sugar until light and fluffy, then beat in the eggs one at a time and stir in the vanilla extract.
Mix in the sour cream and mashed bananas until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then fold in the chopped walnuts and white chocolate chips.
Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely. Spread half of the creamy custard over the top of one layer, place the second layer on top, and spread the remaining custard over the top. Garnish with banana slices and walnuts.
