- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup rainbow sprinkles nonpareils work best
Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract, then mix until smooth and combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add it to the wet mixture, mixing just until combined.
Fold in the sprinkles gently with a spatula.
Chill the dough for 30 minutes, then scoop tablespoon-sized portions onto a lined baking sheet, spacing them about 2 inches apart.
Bake at 350°F for 8-10 minutes, or until the edges are golden but the centers still look soft.
Let cookies sit on the tray for 5 minutes before transferring to a wire rack to cool.
For a fun twist, add a pinch of almond extract along with the vanilla. It will elevate the flavor! Store cookies in an airtight container at room temperature for up to 5 days, or freeze baked cookies for up to 3 months. For mini cookies, reduce the baking time by 1-2 minutes for perfect bite-sized treats.
