Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup rainbow sprinkles nonpareils work best

Instructions

  • Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract, then mix until smooth and combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add it to the wet mixture, mixing just until combined.
  • Fold in the sprinkles gently with a spatula.
  • Chill the dough for 30 minutes, then scoop tablespoon-sized portions onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake at 350°F for 8-10 minutes, or until the edges are golden but the centers still look soft.
  • Let cookies sit on the tray for 5 minutes before transferring to a wire rack to cool.

Notes

For a fun twist, add a pinch of almond extract along with the vanilla. It will elevate the flavor! Store cookies in an airtight container at room temperature for up to 5 days, or freeze baked cookies for up to 3 months. For mini cookies, reduce the baking time by 1-2 minutes for perfect bite-sized treats.
