- 2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter melted
- 3 packages (8 ounces each) cream cheese softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup cocoa powder
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup cherry pie filling
- 1/2 cup fresh cherries optional, for garnish
- 1/2 cup sweet chocolate pieces
- 2 tablespoons heavy cream
Preheat your oven to 325°F (163°C).
Combine chocolate cookie crumbs and melted butter in a mixing bowl until it resembles wet sand.
Press the crust mixture into the bottom of a 9-inch springform pan and bake for 10 minutes; let it cool.
In a large mixing bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in cocoa powder, sour cream, and vanilla extract until well blended.
Pour the cheesecake filling over the cooled crust and smooth the top.
Bake in the preheated oven for 50-60 minutes until edges are set; the center should still jiggle.
Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
Transfer the cheesecake to the fridge and chill for at least 4 hours or overnight.
Spread cherry pie filling over the chilled cheesecake.
Melt chocolate pieces with heavy cream in a microwave-safe bowl and drizzle over the cherries.
Garnish with fresh cherries if desired and serve.
To avoid cracks in your cheesecake, mix the batter gently after adding the eggs. You can substitute chocolate cookie crumbs with graham cracker crumbs if preferred. This cheesecake is best when made a day ahead; it tastes even better the next day! For a different flavor, feel free to use other fruit toppings like raspberries or strawberries. Store leftovers covered in the fridge for up to 5 days or freeze for up to 2 months.
