Ingredients

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp lemon zest from 1 lemon
  • 1 tbsp fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh blueberries
  • 1/2 cup white chocolate chips for the glaze
  • 2 tbsp heavy cream for the glaze

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream together the butter and sugar until light and fluffy.
  • Add the egg, vanilla extract, lemon zest, and lemon juice to the butter mixture and mix until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Gently fold in the fresh blueberries.
  • Add the dough onto the prepared baking sheet and flatten it slightly. Bake for 12-15 minutes, or until the edges are lightly golden.
  • Allow the bars to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • In a small microwave-safe bowl, combine the white chocolate chips and heavy cream. Microwave in 15-second intervals until fully melted and smooth.
  • Drizzle the white chocolate glaze over the cooled bars and garnish with fresh blueberries and lemon zest. Allow the glaze to set before serving.

Notes

These Blueberry Lemon Bars can be stored in an airtight container at room temperature for up to 3 days. For longer storage, place them in the refrigerator for up to a week or freeze for up to 3 months.
