- 1 tablespoon confectioners' sugar
- 1 cup white sugar
- 1/2 cup melted butter
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup frozen blueberries
Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan. Grate the lemon zest and squeeze the lemon juice.
Mix 1 teaspoon lemon zest, 1 tablespoon lemon juice, and confectioners' sugar in a small bowl and set aside.
In a large bowl, whisk together white sugar, melted butter, eggs, sour cream, the remaining lemon zest, and lemon juice until smooth. Stir in the milk.
In a separate bowl, whisk together flour, baking powder, and salt. Remove 3 tablespoons of this mixture and set aside.
Pour the milk mixture into the well in the flour mixture and stir just until combined.
Fold the frozen blueberries into the reserved flour mixture, then gently fold them into the batter. Pour the batter into the loaf pan.
Bake for about 60 minutes until a toothpick comes out clean. Poke holes in the top and pour the lemon topping over it. Let it cool in the pan for 10 minutes before transferring to a wire rack.
