Blender
Ice cube tray or mini muffin pan
Tamper (optional)
Piping bag for presentation
Non-dairy milk if needed to help blend
- 1 cup unsweetened plain non-dairy yogurt preferably high fat, such as coconut milk or almond milk yogurt
- 1 cup frozen blueberries
- 2 tbsp maple syrup optional, for added sweetness
- 1 tsp vanilla extract
- a pinch salt
- to taste non-dairy milk if needed to help blend
Spoon the yogurt into an ice cube tray or mini muffin pan and freeze overnight or until solid.
In a blender, combine the frozen yogurt cubes with the frozen blueberries, vanilla extract, maple syrup (if using), and a pinch of salt. Blend until creamy and smooth.
If the mixture is too thick, add a splash of non-dairy milk to help it blend smoothly.
Serve immediately for a soft-serve texture, or transfer the mixture to a piping bag for a fun presentation.
Add your favorite toppings, like chopped nuts, more fresh blueberries, or a drizzle of honey.
For extra creaminess, blend in chilled coconut cream instead of non-dairy milk. Try to use high-fat non-dairy yogurt for a creamier texture. Lower-fat options can lead to icy results.
