Ingredients

  • 1 cup unsweetened plain non-dairy yogurt preferably high fat, such as coconut milk or almond milk yogurt
  • 1 cup frozen blueberries
  • 2 tbsp maple syrup optional, for added sweetness
  • 1 tsp vanilla extract
  • a pinch salt
  • to taste non-dairy milk if needed to help blend

Instructions

  • Spoon the yogurt into an ice cube tray or mini muffin pan and freeze overnight or until solid.
  • In a blender, combine the frozen yogurt cubes with the frozen blueberries, vanilla extract, maple syrup (if using), and a pinch of salt. Blend until creamy and smooth.
  • If the mixture is too thick, add a splash of non-dairy milk to help it blend smoothly.
  • Serve immediately for a soft-serve texture, or transfer the mixture to a piping bag for a fun presentation.
  • Add your favorite toppings, like chopped nuts, more fresh blueberries, or a drizzle of honey.

Notes

For extra creaminess, blend in chilled coconut cream instead of non-dairy milk. Try to use high-fat non-dairy yogurt for a creamier texture. Lower-fat options can lead to icy results.
