Ingredients

  • 1 ½ cups chocolate cookies or digestive biscuits (crushed into fine crumbs)
  • ¼ cup melted butter
  • 675 g softened cream cheese
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • ¾ cup heavy cream
  • 3 large eggs
  • 200 g dark chocolate chopped
  • ½ cup sweetened condensed milk
  • ¼ cup heavy cream
  • q.s. Mini Brigadeiros for decoration
  • q.s. chocolate sprinkles for decoration

Instructions

  • Preheat your oven to 180°C (350°F).
  • In a mixing bowl, combine the crushed chocolate cookies with melted butter and press firmly into the bottom of a springform pan.
  • Bake the crust for about 10 minutes and then let it cool.
  • Beat softened cream cheese with sugar in a large mixing bowl until smooth.
  • Add vanilla extract and heavy cream, blending until well combined, then incorporate eggs one at a time.
  • Pour the cheesecake filling over the cooled crust and smooth it out.
  • Bake the cheesecake for 55-60 minutes until the center is set but slightly wobbly.
  • Turn off the oven and leave the door slightly ajar to cool the cheesecake gradually.
  • Refrigerate the cheesecake for at least 4 hours or overnight.
  • Melt dark chocolate, sweetened condensed milk, and heavy cream in a saucepan over low heat, stirring until smooth.
  • Let the ganache cool slightly before pouring it over the chilled cheesecake.
  • Decorate with mini Brigadeiros and sprinkle chocolate on top.

Notes

Store leftover cheesecake in the refrigerator for up to 5 days, or freeze individual slices for longer storage. For a lighter crust, consider using graham crackers instead of chocolate cookies, and feel free to swap the chocolate in the ganache to suit your taste preferences. When decorating, fresh berries or caramel drizzle can add a nice touch.
