- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 ripe bananas, mashed
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 2 ripe bananas, sliced
- 1 cup brown sugar
- 1/2 cup heavy cream
- 4 tbsp unsalted butter
- 1 tsp vanilla extract
- pinch salt
- q.s. crushed graham crackers for topping
- q.s. banana slices for garnish
- q.s. powdered sugar for garnish
Preheat your oven to 350°F (175°C), line a jelly roll pan with parchment paper, and grease it lightly.
In a mixing bowl, beat the egg yolks with the granulated sugar until light and airy. Mix in the mashed bananas and vanilla extract.
In another bowl, whip the egg whites until stiff peaks form. Gently fold the whites along with the dry ingredients into the wet mixture.
Pour the mixture into the prepared pan, spreading it evenly, then bake for 10–12 minutes.
Once baked, sprinkle the sponge with powdered sugar and roll it up in a clean towel while still warm. Let it cool rolled.
Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
Unroll the cooled sponge, spread the whipped cream, and layer with banana slices. Roll it back up.
Drizzle generously with caramel sauce.
Garnish with crushed graham crackers, additional banana slices, and powdered sugar. Slice and serve.
Feel free to substitute heavy whipping cream with coconut cream for a vegan option or use gluten-free flour. For enhanced flavor, toast the crushed graham crackers before using them as a topping.
