Ingredients

  • 4 large eggs, separated
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 ripe bananas, sliced
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • pinch salt
  • q.s. crushed graham crackers for topping
  • q.s. banana slices for garnish
  • q.s. powdered sugar for garnish

Instructions

  • Preheat your oven to 350°F (175°C), line a jelly roll pan with parchment paper, and grease it lightly.
  • In a mixing bowl, beat the egg yolks with the granulated sugar until light and airy. Mix in the mashed bananas and vanilla extract.
  • In another bowl, whip the egg whites until stiff peaks form. Gently fold the whites along with the dry ingredients into the wet mixture.
  • Pour the mixture into the prepared pan, spreading it evenly, then bake for 10–12 minutes.
  • Once baked, sprinkle the sponge with powdered sugar and roll it up in a clean towel while still warm. Let it cool rolled.
  • Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
  • Unroll the cooled sponge, spread the whipped cream, and layer with banana slices. Roll it back up.
  • Drizzle generously with caramel sauce.
  • Garnish with crushed graham crackers, additional banana slices, and powdered sugar. Slice and serve.

Notes

Feel free to substitute heavy whipping cream with coconut cream for a vegan option or use gluten-free flour. For enhanced flavor, toast the crushed graham crackers before using them as a topping.
