Ingredients

  • 1 cup crushed chocolate wafer cookies
  • 1/4 cup melted butter
  • 1/2 cup caramel sauce
  • 1/2 cup brownie chunks
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • q.s. additional caramel sauce for drizzling to taste
  • q.s. whipped cream for topping to taste

Instructions

  • Preheat your oven to 325F (160C) and grease a 9-inch springform pan.
  • Combine the crushed chocolate wafer cookies and melted butter in a medium bowl, then press into the bottom of the prepared pan.
  • Drizzle 1/2 cup of caramel sauce over the crust and sprinkle brownie chunks on top.
  • In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each. Then mix in sour cream and heavy cream, followed by gently folding in chocolate chips.
  • Pour the cheesecake batter over the crust and smooth the top. Bake for 60-70 minutes until the center is set and edges are lightly browned.
  • Turn off the oven and let the cheesecake cool inside with the door slightly open for about 1 hour. Refrigerate for at least 4 hours or overnight.
  • Before serving, drizzle additional caramel sauce on top and garnish with whipped cream.

Notes

Make sure your cream cheese is at room temperature for a smoother texture. You can utilize a water bath to prevent cracks while baking. Let the cheesecake cool completely before refrigerating to avoid condensation. For an elegant touch, garnish with fresh berries and a sprig of mint, and consider sprinkling cocoa powder or powdered sugar for decoration.
