Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 packages cream cheese, softened 8 ounces each
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup candies, unwrapped
  • 1/2 cup caramel pieces
  • 1/4 cup heavy cream

Instructions

  • Preheat your oven to 325°F (160°C) and prepare the crust mixture by mixing the graham cracker crumbs, melted butter, and sugar until well combined, then press into the bottom of a 9-inch springform pan.
  • In a large mixing bowl, beat the softened cream cheese until smooth, then add sugar and mix until combined; beat in eggs one at a time and stir in vanilla extract until smooth and creamy.
  • Pour the cheesecake filling over the chilled crust in the springform pan and smooth the top with a spatula; bake for about 50 minutes, until the center is set.
  • Let the cheesecake cool completely in the pan on a wire rack to help it set properly.
  • Melt the caramels with heavy cream in a saucepan over low heat, stirring until smooth; stir in the caramel pieces and pour the mixture over the cooled cheesecake.
  • Refrigerate the cheesecake for at least 4 hours or overnight, then sprinkle reserved caramel pieces on top just before serving.

Notes

For a twist on the crust, you can use crushed cookies or pretzels instead of graham cracker crumbs. If you prefer a lighter version, substitute heavy cream with half-and-half or whole milk. Ensure that all ingredients, especially cream cheese, are at room temperature before starting for the best texture. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze without the topping for up to 3 months. For a lovely presentation, drizzle extra caramel sauce and add a dollop of whipped cream or fresh berries on top just before serving!
