  • 1.5 cups graham cracker crumbs
  • 0.25 cups melted butter
  • 16 ounces cream cheese softened

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs and melted butter until resembling wet sand. Press into the bottom of a 9-inch springform pan.
  • Bake for 8-10 minutes or until golden brown.
  • In a large bowl, beat softened cream cheese until smooth and creamy.
  • Gradually add sugar, flour, and vanilla extract, mixing until combined.
  • Beat in eggs one at a time, ensuring full incorporation.
  • Pour the cheesecake batter into the prepared crust and smooth the top with a spatula.
  • Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside for an hour.
  • In a skillet, melt butter over medium heat and add sliced bananas.
  • Sprinkle brown sugar and cinnamon over the bananas, cooking for 2-3 minutes per side until golden.
  • In a small saucepan, combine rum, brown sugar, and water. Bring to a simmer and cook for 2 minutes.
  • Once cheesecake is cool, top with caramelized bananas and drizzle with the rum glaze. Serve immediately.
