- 200 g goat cheese
- 2 pieces zucchinis
- 3 pieces eggs
- 150 g flour
- 1 packet baking powder
- 100 ml milk
- 50 ml olive oil
- to taste salt and pepper
- optional Herbes de Provence
Preheat your oven to 180°C (350°F) and grease a loaf pan with butter or cooking spray.
Grate the zucchinis and squeeze out the excess water using a clean kitchen towel.
In a large bowl, beat the eggs, then add the milk and olive oil, mixing well.
Add the flour, baking powder, salt, and pepper to the wet ingredients, and stir until smooth and free of lumps.
Gently fold in the grated zucchini and crumbled goat cheese until well combined.
Pour the batter into the greased loaf pan, smoothing the top with a spatula.
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Let the Cheese Zucchini Delight cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
If goat cheese isn't available, feta or ricotta can be used for a similar tangy flavor.
Store the Cheese Zucchini Delight wrapped in plastic wrap or foil in the fridge for up to 3 days, or freeze slices for up to 2 months.
For added flavor, try a sprinkle of grated Parmesan cheese on top before baking.
Ensure to squeeze out excess water from zucchini to maintain the texture of the dish.
This recipe can also be baked in a muffin tin for individual servings—just adjust the baking time to 20-25 minutes.
