Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 cup cherry pie filling

Instructions

  • Mix graham cracker crumbs with melted butter until it resembles wet sand and press into the bottom of a 9-inch springform pan.
  • In a large bowl, beat softened cream cheese, sugar, and vanilla extract until smooth and creamy, then add eggs one at a time, beating well after each addition.
  • Blend in sour cream and heavy cream until the batter is thick but pourable, then pour half of the cheesecake batter over the crust.
  • Spoon half of the cherry pie filling on top, creating dollops, repeat with remaining batter and cherry filling, and gently swirl layers together with a knife.
  • Bake in a preheated oven at 325°F (160°C) for 50-60 minutes until edges are set but center jiggles slightly.
  • Let cool completely before chilling in the fridge for at least 4 hours or overnight.
