Ingredients

  • 3 cups heavy cream
  • 1/3 cup sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons coconut flakes optional
  • 2 tiles sugar-free chocolate optional
  • 1 package (9 oz) chocolate wafer cookies
  • 3 cups melted chocolate chips
  • 1 cup mini chocolate chips for decoration
  • q.s. additional chocolate chips to taste

Instructions

  • Whip the heavy cream with sugar, vanilla, and coconut flakes until stiff peaks form.
  • Spread a thin layer of whipped cream at the bottom of your mold.
  • Add a layer of chocolate wafer cookies on top of the cream and drizzle melted chocolate generously over the cookies.
  • Repeat these layers until the mold is full, finishing with a thick layer of whipped cream on top.
  • Sprinkle mini chocolate chips and additional chocolate chips on top for decoration.
  • Chill the cake in the refrigerator for at least 2 hours, or overnight for best results.

Notes

To enhance the flavor, lightly toast the coconut flakes before adding them to the whipped cream for a nuttier taste. Ensure your heavy cream is cold for better whipping results. Don’t skip the chilling time—the cookies need the time to soften. Feel free to experiment with different toppings like crushed nuts or sprinkles for variety. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze individual slices for up to a month. Thaw frozen slices in the fridge overnight before serving.
