Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar

  • 2 ripe bananas, sliced
  • 2 tbsp lemon juice to prevent browning
  • 8 oz semi-sweet chocolate, chopped
  • 0.5 cup heavy cream (for ganache)
  • 1 tbsp unsalted butter

Instructions

  • Preheat the oven to 350°F (175°C) and grease and line two 9-inch round cake pans.
  • In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until combined.
  • Gradually pour the wet mixture into the dry ingredients, stirring gently; then slowly add the boiling water.
  • Pour the batter into the prepared pans and bake for 30-35 minutes, until a toothpick comes out clean.
  • Cool the cakes in the pans for 10 minutes before transferring to a wire rack.
  • For the peanut butter filling, beat together the peanut butter, powdered sugar, heavy cream, and vanilla extract until smooth.
  • Heat the heavy cream for the ganache in a saucepan over medium heat until simmering, then stir in the chopped chocolate and butter until smooth.
  • On a serving plate, place one cake layer and spread peanut butter filling over it; add banana slices and drizzle with lemon juice.
  • Top with the second cake layer and pour the chocolate ganache over the top, smoothing it out as needed.
  • Let the ganache set for a few minutes before slicing and serving.
