Equipment

  • Mixing bowl
  • Whisk
  • Spatula
  • Ramekins or individual molds
  • Mixer (hand or stand)

Ingredients

  • 200 g dark chocolate
  • 100 g praline
  • 250 g mascarpone
  • 3 pieces eggs
  • 80 g sugar
  • 50 g butter
  • 1 sachet baking powder
  • 150 g biscuits for the base

Instructions

  • Preheat your oven to 180 degrees Celsius.
  • Melt the dark chocolate and butter in the microwave or double boiler until smooth.
  • In a large bowl, separate the egg whites from the yolks and beat the yolks with the sugar until pale and creamy.
  • Combine the melted chocolate with the yolk and sugar mixture, then fold in the praline and baking powder.
  • Whip the egg whites until stiff peaks form and gently fold them into the chocolate mixture.
  • Crumble the biscuits and spread them at the bottom of individual molds, then pour the chocolate mixture over the biscuit base.
  • Bake for 20 minutes and let the domes cool in the molds.
  • Beat the mascarpone with a bit of sugar and fold in the whipped egg whites to create the mousse.
  • Top each dome with mascarpone mousse, smooth it out, and refrigerate for at least 2 hours.
  • Serve chilled.

Notes

For a unique twist, add a pinch of sea salt to the chocolate mixture to enhance the flavors. If you can't find praline, hazelnut paste or Nutella can be used as substitutes. Store in an airtight container in the fridge for up to 3 days, or freeze (without mousse) for up to a month. Present the domes dusted with cocoa powder or garnished with fresh berries for an elegant touch.
