- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 2 tsp ground cinnamon
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup unsweetened applesauce
- 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium apples)
- 2 cups powdered sugar for the glaze
- 1/3 cup apple cider or juice for the glaze
Preheat your oven to 350°F (175°C) and grease the mini muffin tin with nonstick cooking spray.
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
In another bowl, whisk the melted butter and granulated sugar until combined, then add the egg, vanilla extract, and applesauce, mixing until smooth.
Gradually stir the dry ingredients into the wet ingredients until just combined, then fold in the diced apples.
Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
Bake for 12-15 minutes, or until a toothpick comes out clean from the center of a bite.
While cooling, make the glaze by whisking together the powdered sugar and apple cider until smooth.
Dip each warm apple fritter bite into the glaze and let them set on a cooling rack.
For a healthier twist, substitute applesauce with mashed bananas or yogurt. You can use any sweet, firm apple like Fuji or Pink Lady. For the glaze, if you don't have apple cider, use orange juice or milk instead. To enhance the glaze, try adding a pinch of cinnamon. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
