Ingredients

  • 2 cups fresh apple cider
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine salt
  • 1 tsp ground cinnamon
  • a pinch ground cardamom
  • a pinch freshly grated nutmeg
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup warm milk
  • 6 tbsp unsalted butter, melted, divided
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup white sugar (for topping)
  • 1 tbsp ground cinnamon (for topping)

Instructions

  • Preheat your oven to 375°F (190°C) and grease two 6-cup donut pans with butter.
  • Pour 2 cups of apple cider into a saucepan and simmer until it reduces to 1/2 cup.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, cardamom, and nutmeg.
  • In another bowl, whisk together the sugars, warm milk, 2 tablespoons of melted butter, vanilla extract, and egg. Add the reduced apple cider and mix well.
  • Combine the wet and dry ingredients and whisk to form a slightly thick batter, being careful not to overmix.
  • Spoon or pipe the batter into the prepared donut pans, filling each cavity about 2/3 full. Bake for 10 to 12 minutes until tops are lightly browned and spring back when touched.
  • Let the donuts cool in the pans for about 10 minutes, then remove to a sheet pan. Brush with melted butter and toss in the sugar-cinnamon mixture. Cool completely before serving.

Notes

Use high-quality spices for the best flavor. Don’t overmix the batter to keep the donuts light and fluffy. Brush donuts with melted butter while warm for better sugar coating. Store in an airtight container for up to 2 days or refrigerate for up to 5 days. Reheat to restore texture. For a twist, consider adding grated apple to the batter for enhanced flavor. Enjoy baking!
