Ingredients

  • 4 cups cubed day-old bread
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 1 tbsp ground cinnamon for coating

Instructions

  • Preheat your oven to 350°F (175°C) and grease a muffin tin.
  • In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, ground cinnamon, and salt.
  • Add the cubed day-old bread to the wet mixture and let it soak for 5-10 minutes.
  • Spoon the soaked bread mixture into the greased muffin tin, filling each cup about 3/4 full.
  • In a separate bowl, mix the sugar and ground cinnamon and sprinkle it over the top of each muffin.
  • Bake the muffins for 18-20 minutes, or until they are golden and set.
  • Let the muffins cool slightly before removing them from the tin and serve warm.

Notes

For best results, use day-old bread as it absorbs flavors better for moist muffins. Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
