Instructions

  • Preheat your oven to 180°C (350°F).
  • Roll out the pâte sablée and place it in a Yule log or loaf pan; prick with a fork and bake for 15 minutes until golden brown; let cool completely.
  • In a saucepan, whisk together the eggs, sugar, lemon juice, lemon zest, and cornstarch; heat on low until thickened; remove from heat and stir in butter until smooth; pour over cooled pastry and refrigerate for at least 2 hours.
  • Beat egg whites and a pinch of salt until stiff peaks form; gradually add powdered sugar until glossy and smooth; spoon over lemon filling.
  • Optionally, toast the meringue with a kitchen torch or broiler for a golden color; garnish with extra lemon zest.
