Ingredients

  • 200 ml heavy cream
  • 100 g sugar

Instructions

  • Rinse the clementines thoroughly, then peel and juice them, saving a little zest for garnishing.
  • In a large bowl, beat the egg whites until they form stiff peaks.
  • In a small saucepan, heat the heavy cream, sugar, and sliced vanilla bean on low heat until the sugar dissolves and the mixture is warm.
  • Remove the cream mixture from the heat and stir in the clementine juice.
  • Take a small portion of the beaten egg whites and mix it into the cream mixture, then gently fold in the remaining egg whites.
  • Pour the mousse into individual serving dishes and let them chill in the refrigerator for at least 2 hours.
  • Sprinkle the saved clementine zest on top before serving.

Notes

For a vegan version, substitute egg whites with aquafaba and heavy cream with coconut cream. Enhance flavor by adding a dash of orange liqueur to the cream mixture.
