- 200 ml heavy cream
- 100 g sugar
Rinse the clementines thoroughly, then peel and juice them, saving a little zest for garnishing.
In a large bowl, beat the egg whites until they form stiff peaks.
In a small saucepan, heat the heavy cream, sugar, and sliced vanilla bean on low heat until the sugar dissolves and the mixture is warm.
Remove the cream mixture from the heat and stir in the clementine juice.
Take a small portion of the beaten egg whites and mix it into the cream mixture, then gently fold in the remaining egg whites.
Pour the mousse into individual serving dishes and let them chill in the refrigerator for at least 2 hours.
Sprinkle the saved clementine zest on top before serving.
For a vegan version, substitute egg whites with aquafaba and heavy cream with coconut cream. Enhance flavor by adding a dash of orange liqueur to the cream mixture.
