Ingredients

  • 1 cup grated coconut
  • 1/2 cup sweetened condensed milk
  • 1 cup crushed graham crackers
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • a pinch salt

Instructions

  • Combine the shredded coconut, crushed graham crackers, cocoa powder, and a pinch of salt in a large mixing bowl.
  • Pour in the sweetened condensed milk and vanilla extract, stirring until the mixture starts to clump together.
  • Scoop out small portions of the mixture, about a tablespoon each, and roll them into balls using your hands.
  • Place each ball on a parchment-lined baking sheet.
  • Chill the tray in the refrigerator for at least 30 minutes.
  • Roll the coconut cream balls in additional grated coconut before serving.

Notes

For a twist, toast the shredded coconut lightly before mixing it in for added flavor. Store the coconut cream balls in an airtight container in the refrigerator for up to a week. They can also be frozen for up to three months; just thaw in the fridge before serving. Consider using room temperature ingredients for easier mixing and adding a sprinkle of sea salt on top for a sweet-and-salty twist.
