Ingredients

  • 2 cups cookie dough ice cream slightly softened
  • 1 package chocolate wafer cookies
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  • Line a baking sheet with parchment paper and spread the softened cookie dough ice cream evenly over it to about 1/2 inch thickness. Freeze for 2 hours until firm.
  • While the ice cream chills, lay out the chocolate wafer cookies on a piece of plastic wrap, slightly overlapping their edges, and press gently to form a single sheet.
  • In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Remove the ice cream sheet from the freezer and place it over the cookie layer. Spread the whipped cream evenly on top,
  • then tightly roll the layers into a log using the plastic wrap. Freeze again for 4 hours or overnight.
  • Once firm, slice the log into 1-inch rolls, drizzle with chocolate, and add sprinkles for garnish.

Use high-quality ingredients for the best flavor. Experiment with different cookie flavors for variety. Store the swirls in an airtight container in the freezer; they'll last up to a week but are best within 3 days. For longer storage, freeze the assembled log for up to a month.
