- 1 box yellow cake mix
- 1 can (20 oz) crushed pineapple, undrained or substitute with applesauce for an apple crack cake
- 3 large eggs
- ½ cup vegetable oil
- 1 package (3 oz) instant vanilla pudding mix
- 1 cup chopped pecans or walnuts optional
- 1 cup shredded coconut optional
- 1 cup packed brown sugar
- 1 stick (½ cup) unsalted butter, melted
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
In a large bowl, mix the cake mix, crushed pineapple (with its juice), eggs, oil, and pudding mix until smooth.
Spread the batter evenly into the prepared pan, then sprinkle pecans, coconut, and brown sugar over the top.
Drizzle melted butter evenly on top and bake for 40-45 minutes, or until a toothpick comes out clean.
Feel free to swap pineapple for other fruits like strawberries or apples to customize the flavor. Toasting the nuts before adding them enhances their flavor. Ensure to store the cake tightly covered to maintain its moistness and crunch on top. If freezing, wrap slices individually and thaw in the fridge before serving.
