- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 ripe bananas, mashed
- 1/4 cup sour cream
- 4 oz cream cheese, softened
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Mix in the mashed bananas and sour cream until well combined.
In a separate bowl, beat the cream cheese until smooth.
Pour half of the banana batter into the prepared loaf pan and spread the cream cheese over it, then top with the remaining banana batter.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
For a burst of flavor, try adding a teaspoon of lemon zest to the cream cheese layer. Store the cooled bread in an airtight container at room temperature for up to 5 days. For substitutions: Use coconut oil instead of butter, brown sugar for granulated sugar, or applesauce/yogurt instead of eggs for an egg-free version.
