Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 ripe bananas, mashed
  • 1/4 cup sour cream
  • 4 oz cream cheese, softened

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Mix in the mashed bananas and sour cream until well combined.
  • In a separate bowl, beat the cream cheese until smooth.
  • Pour half of the banana batter into the prepared loaf pan and spread the cream cheese over it, then top with the remaining banana batter.
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a burst of flavor, try adding a teaspoon of lemon zest to the cream cheese layer. Store the cooled bread in an airtight container at room temperature for up to 5 days. For substitutions: Use coconut oil instead of butter, brown sugar for granulated sugar, or applesauce/yogurt instead of eggs for an egg-free version.
