  • Baking mold
  • Toothpick or cake tester
  • Spatula

  • 3 cups broken corn (fresh or frozen)
  • 1 cup sugar
  • 3 medium eggs
  • 1/2 cup vegetable oil
  • 1 cup wheat flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 200 g cold cream cheese (block)
  • to taste cinnamon optional

Instructions

  • Blend the corn, sugar, eggs, and oil in a blender or food processor until smooth.
  • In a mixing bowl, combine wheat flour, baking powder, and salt; stir well.
  • Pour half of the blended mixture into a greased baking mold, place the cream cheese cubes on top, then cover with the remaining mixture.
  • Bake at 180°C (350°F) for 40-45 minutes, checking with a toothpick for doneness.

Notes

For enhanced flavor, add a teaspoon of vanilla extract to the wet ingredients. Store in an airtight container for up to two days or freeze individual slices wrapped in plastic for up to a month. Reheat in the microwave for 20-30 seconds. You can use canned corn if fresh or frozen isn't available, and feel free to adjust the sweetness by reducing sugar or using honey/maple syrup. If you're feeling adventurous, try adding spices like nutmeg or cardamom instead of cinnamon, and enjoy experimenting with variations like whole grain or gluten-free options.
