- 1.5 tsp vanilla extract
- 2 cups all-purpose flour
- 1.5 tsp baking powder
- 0.5 tsp salt
- 2 cups cranberries fresh or frozen

Preheat the oven to 350°F (175°C) and grease two 9 x 5 inch loaf pans or four mini loaf pans.
In a large mixing bowl, cream together the softened butter, cream cheese, sugar, and vanilla extract until smooth and creamy.
Add the eggs one at a time, beating well after each addition.
In a separate bowl, whisk together the flour, baking powder, and salt, then mix into the wet batter until just combined.
Gently fold in the cranberries and chopped pecans, if using.
Pour the batter into the prepared loaf pans and bake at 350°F for 45-60 minutes (40 minutes for mini loaves).
Check for doneness by inserting a toothpick in the center; it should come out clean or with a few crumbs.
