Ingredients

  • 1 cup butter softened
  • 8 oz cream cheese softened
  • 1.5 cups sugar
  • 1.5 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 2 cups cranberries fresh or frozen
  • 0.5 cups chopped pecans optional

Instructions

  • Preheat the oven to 350°F (175°C) and grease two 9 x 5 inch loaf pans or four mini loaf pans.
  • In a large mixing bowl, cream together the softened butter, cream cheese, sugar, and vanilla extract until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, whisk together the flour, baking powder, and salt, then mix into the wet batter until just combined.
  • Gently fold in the cranberries and chopped pecans, if using.
  • Pour the batter into the prepared loaf pans and bake at 350°F for 45-60 minutes (40 minutes for mini loaves).
  • Check for doneness by inserting a toothpick in the center; it should come out clean or with a few crumbs.
  • Allow the bread to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
