Ingredients

  • 1 pack pineapple-flavored jelly
  • 1 can evaporated milk
  • 1 can half-and-half cream
  • 1 can condensed milk
  • 190 g cream cheese
  • 2 tablespoons grenetina (optional)
  • 1/2 cup pineapple syrup
  • 1 cup grated carrot
  • 1/2 cup minced pineapple in syrup
  • 1/2 cup chopped nuts
  • a handful raisins (optional)

Instructions

  • Dissolve the pineapple-flavored jelly in 1 liter of boiling water and set aside to cool slightly.
  • If using, soak grenetina in 1/4 cup of water, then heat it gently in the microwave for 10-15 seconds to dissolve.
  • In a blender, combine evaporated milk, half-and-half cream, condensed milk, cream cheese, dissolved grenetina, and warm pineapple jelly. Blend until smooth.
  • In a large bowl, mix together grated carrot, minced pineapple, chopped nuts, and raisins (if using).
  • Pour the creamy mixture over the solid ingredients and fold together gently.
  • Pour the mixture into a greased mold, smooth the top, and let it chill in the fridge for at least 4 hours.
  • Carefully unmold onto a serving plate and garnish as desired before serving.

Notes

This dish can also be frozen for up to a month; just thaw overnight in the fridge before serving. Consider garnishing with edible flowers or a drizzle of caramel sauce for a special touch.
