- 1 pack pineapple-flavored jelly
- 1 can evaporated milk
- 1 can half-and-half cream
- 1 can condensed milk
- 190 g cream cheese
- 2 tablespoons grenetina (optional)
- 1/2 cup pineapple syrup
- 1 cup grated carrot
- 1/2 cup minced pineapple in syrup
- 1/2 cup chopped nuts
- a handful raisins (optional)
Dissolve the pineapple-flavored jelly in 1 liter of boiling water and set aside to cool slightly.
If using, soak grenetina in 1/4 cup of water, then heat it gently in the microwave for 10-15 seconds to dissolve.
In a blender, combine evaporated milk, half-and-half cream, condensed milk, cream cheese, dissolved grenetina, and warm pineapple jelly. Blend until smooth.
In a large bowl, mix together grated carrot, minced pineapple, chopped nuts, and raisins (if using).
Pour the creamy mixture over the solid ingredients and fold together gently.
Pour the mixture into a greased mold, smooth the top, and let it chill in the fridge for at least 4 hours.
Carefully unmold onto a serving plate and garnish as desired before serving.
This dish can also be frozen for up to a month; just thaw overnight in the fridge before serving. Consider garnishing with edible flowers or a drizzle of caramel sauce for a special touch.
