- 1 cup butter room temperature
- 1 cup light brown sugar packed
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 tsp kosher salt
- 1 tsp baking soda
- 1.5 cups all-purpose flour
- 3/4 cup sweetened flaked coconut
- 3 cups old-fashioned oats
- 1 cup optional mix-ins chocolate chips, white chocolate chips, raisins, or walnuts
