Instructions

  • Melt the chocolate and butter together in a double boiler until glossy and smooth.
  • Combine powdered sugar, flour, and cocoa powder in another bowl, sifting to avoid lumps.
  • Add eggs to the chocolate mixture one at a time, whisking gently after each addition.
  • Incorporate the dry ingredients alternating with hot water until the batter is thick but pourable.
  • Pour the batter into a greased and cocoa-dusted mold and bake in a preheated oven at 350°F (180°C) for about 30-35 minutes.
  • Let the cake cool completely before unmolding.
  • While the cake cools, prepare the filling by mixing softened butter, dulce de leche, melted chocolate, whipped cream, and instant coffee until light and fluffy.
  • Chill the filling for 15 minutes before spreading it between the cake layers.
  • Assemble the cake by cutting it into two or three layers and adding the filling generously between layers.
  • Cover the top with remaining cream and sprinkle with bitter cocoa powder for decoration.
