Ingredients

  • 1 1/2 cups hazelnuts, toasted and peeled
  • 15 pieces Maria cookies
  • 4 1/2 cups milk, divided
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 6 pieces egg yolks
  • 1 1/2 cups hazelnuts, toasted and peeled (for mousse)
  • 1 1/2 cups Nutella
  • 1 quart heavy cream, cold
  • 3/4 cup confectioners sugar
  • 20 pieces Ferrero Rocher chocolates, halved
  • 5 to 10 pieces Ferrero Rocher chocolates, to decorate

Instructions

  • Combine toasted hazelnuts and Maria cookies in a food processor. Pulse until crumbly texture forms; set aside.
  • In a large saucepan, mix 4 cups of milk and sugar. Heat until sugar dissolves. In a separate bowl, whisk remaining milk with cornstarch and egg yolks. Slowly combine with hot milk, whisking constantly. Cook until thickened; divide into two bowls and cool.
  • Process hazelnuts until smooth and creamy. Mix with one bowl of cooled pastry cream. Cover and refrigerate overnight or at least 4 hours. Fold in 1/4 of the whipped cream before assembling.
  • Mix Nutella with the second bowl of cooled pastry cream. Cover and refrigerate overnight or at least 4 hours. Fold in 1/4 of the whipped cream before assembling.
  • Beat heavy cream and confectioners sugar until stiff peaks form. Divide the whipped cream into parts for mousses and top.
  • Assemble the trifle by layering hazelnut crumbs, Nutella mousse, halved Ferrero Rocher, hazelnut mousse, and topped with whipped cream. Decorate with additional Ferrero Rocher chocolates.

Notes

For substitutions, use graham crackers or digestive biscuits instead of Maria cookies, or any chocolate hazelnut spread instead of Nutella. Store the trifle in the refrigerator, covered, for up to 2 days. If the trifle shows separation or condensation, a gentle stir will help maintain consistency. Toasting the hazelnuts enhances their flavor; don't skip this step!
