- 1 pound breakfast sausage
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 3 large eggs
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1/4 cup chopped green onions (optional)
Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin or line it with muffin cups.
In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked; break it into small pieces as it cooks. Drain excess fat and let cool slightly.
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
In another bowl, beat the eggs, milk, and vegetable oil until well combined.
Gradually pour the wet ingredients into the dry ingredients, stirring just until mixed.
Fold in the cooled sausage, cheddar cheese, mozzarella cheese, and green onions (if using).
Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake the muffins for about 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
For extra flavor, try adding a pinch of paprika or a dash of hot sauce to the batter. Feel free to experiment with different cheeses and seasonings to customize the muffins. Once cooled, store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months. When reheating from frozen, thaw overnight in the fridge or microwave for a quick breakfast.
