Ingredients

  • 2 large eggs
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 1 cup eggnog
  • 2 tbsp rum extract
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 5x9-inch loaf pan.
  • In a large bowl, whisk the eggs until well beaten, then add the sugar, melted butter, eggnog, rum extract, and vanilla extract, mixing until smooth.
  • In another bowl, whisk together the flour, baking powder, salt, and nutmeg until well mixed.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 40-60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra special touch, sprinkle the top of the loaf with powdered sugar before serving. Store wrapped in plastic wrap or aluminum foil in the refrigerator for up to 5 days, or freeze for up to 3 months. Slicing the loaf while it's still slightly warm can help avoid crumbling. For a different flavor profile, consider adding a pinch of cinnamon or cloves.
