- 3 eggs eggs
- 1 cup sugar
- 2 cups wheat flour
- 1/2 cup vegetable oil
- 1 cup milk
- 1 tbsp baking powder
- 1 tbsp vanilla extract
Preheat your oven to 180C (350F).
In a large mixing bowl, beat the eggs until they are light and fluffy.
Gradually add the sugar to the beaten eggs while continuing to beat.
Add the flour, milk, vegetable oil, baking powder, and vanilla extract to the egg and sugar mixture, and beat until smooth.
Grease a baking mold with butter or cooking spray and pour in the batter, filling it three-quarters full.
Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
Let the pancakes cool slightly, then unmold them onto a serving plate and sprinkle with powdered sugar.
For an egg-free option, substitute eggs with applesauce or flax eggs. You can use honey or maple syrup instead of sugar for natural sweetness. Melted butter or coconut oil can replace vegetable oil. For a dairy-free version, swap cow's milk with almond milk or oat milk. Experiment with flavor by adding a dash of cinnamon or nutmeg to the batter. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month with parchment paper between pancakes. Reheat in the microwave or toaster for a quick treat.
