- 125 g sugar
- 1 whole egg
- 1 sheet puff pastry
- 100 g ground almonds
- 50 g softened butter
- 2 tbsp crème pâtissière
- 1 fève (bean or trinket)
- 1 yolk egg yolk for the glaze
- 1 zest lemon
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
In a large mixing bowl, combine the softened butter and sugar until light and creamy.
Add the egg to the butter and sugar mixture and beat well until fully incorporated.
Mix in the ground almonds, lemon zest, and crème pâtissière gently.
Roll out the puff pastry on a lightly floured surface and place it on the prepared baking tray. Spread the frangipane mixture over half of the pastry, leaving a 2 cm border. Place the fève in the filling.
Fold the other half of the pastry over the filling to create a half-moon shape. Press the edges to seal and crimp with a fork.
Score a pattern on the top of the galette and brush with egg yolk for glazing.
Bake in the preheated oven for about 30 minutes until golden and puffed. Let it cool slightly before serving.
