Ingredients

  • 125 g sugar
  • 1 whole egg
  • 1 sheet puff pastry
  • 100 g ground almonds
  • 50 g softened butter
  • 2 tbsp crème pâtissière
  • 1 fève (bean or trinket)
  • 1 yolk egg yolk for the glaze
  • 1 zest lemon

Instructions

  • Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  • In a large mixing bowl, combine the softened butter and sugar until light and creamy.
  • Add the egg to the butter and sugar mixture and beat well until fully incorporated.
  • Mix in the ground almonds, lemon zest, and crème pâtissière gently.
  • Roll out the puff pastry on a lightly floured surface and place it on the prepared baking tray. Spread the frangipane mixture over half of the pastry, leaving a 2 cm border. Place the fève in the filling.
  • Fold the other half of the pastry over the filling to create a half-moon shape. Press the edges to seal and crimp with a fork.
  • Score a pattern on the top of the galette and brush with egg yolk for glazing.
  • Bake in the preheated oven for about 30 minutes until golden and puffed. Let it cool slightly before serving.
