Ingredients

  • 6 eggs
  • 150 g sugar
  • 200 g flour
  • 1 pinch salt
  • 0.5 packet baking powder
  • Buttercream store-bought or homemade
  • Raspberry jam
  • Crocony or grated chocolate for topping

Instructions

  • Whip the eggs and sugar until light and fluffy, about 15 minutes with an electric mixer.
  • In another bowl, mix flour, salt, and baking powder, then sift into the egg mixture gently.
  • Pour the batter into a lined 26 cm baking pan, without greasing the edges.
  • Bake at 180°C for 25-30 minutes until done.
  • Cool the cake completely on a wire rack.
  • Divide the cooled cake into three equal layers.
  • Place the first layer in a cake ring, spread raspberry jam, then buttercream on top.
  • Repeat with the second layer and finish with the third layer.
  • Cover the entire cake with remaining buttercream and sprinkle with crocony.

Notes

For added moistness, brush each cake layer with a simple syrup. Store the cake in an airtight container in the fridge for up to five days or freeze individual slices for longer storage. Room temperature eggs yield better volume; take your eggs out ahead of time. Customize the flavors with different jams or fillings to suit your taste!
