Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 tbsp granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup confectioners' sugar
  • 1 cup chocolate ganache

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Combine water and unsalted butter in a saucepan. Bring it to a boil while stirring constantly.
  • Gradually add all-purpose flour, mixing vigorously until the mixture forms a smooth ball.
  • Let the dough cool slightly before adding eggs one at a time. Mix thoroughly after each addition until glossy.
  • Transfer the dough to a piping bag fitted with a round tip. Pipe long strips onto the prepared baking sheet.
  • Bake for 20-25 minutes until golden brown and puffed.
  • Once cooled, slice the éclairs horizontally. Fill them with whipped heavy cream using another piping bag.
  • Top generously with chocolate ganache and dust with confectioners' sugar.
