Ingredients

  • 2 sheets puff pastry
  • 4 pieces eggs
  • 150 g grated almonds
  • 50 g butter
  • 110 g sugar
  • 125 ml milk
  • 1 pod vanilla
  • 10 g cornstarch (maicena)
  • to taste bitter almond essence optional

Instructions

  • Heat the milk with the vanilla pod until fragrant, remove the pod, and set the milk aside.
  • In a mixing bowl, whisk sugar and cornstarch together, then add two eggs and beat until smooth.
  • Slowly pour the warm milk into the bowl while stirring to avoid lumps.
  • Transfer the mixture back to the stove and cook over low heat until thickened.
  • Stir in the butter and grated almonds until glossy. Let the cream cool.
  • Roll out one puff pastry sheet on a parchment-lined baking tray and spread the cooled almond cream in the center, leaving a 2 cm border.
  • Cover with the second puff pastry sheet and press the edges to seal.
  • Create a decorative pattern on top with a knife.
  • Beat the remaining two eggs and brush the surface of the galette with egg wash.
  • Chill in the fridge for 15 minutes, brush again for extra shine.
  • Preheat oven to 180°C (350°F) and bake for 30-35 minutes until golden and puffed.
  • Let cool slightly before slicing and serving.

Notes

Don’t skip chilling the assembled galette; it helps the pastry retain its shape. Use high-quality puff pastry for the best results; store-bought works fine. Keep the oven door closed while baking to ensure even puffing. Feel free to substitute ingredients based on your preferences, such as using almond extract instead of bitter almond essence or coconut milk for dairy-free. For storage, wrap leftovers and keep in an airtight container for up to two days at room temperature, or freeze for up to a month. Reheat in the oven to restore crispness.
