Ingredients

  • 200 g María or Digestive cookies
  • 100 g melted butter
  • 400 ml whipped cream
  • 200 g cream cheese
  • 100 g sugar
  • q.s. Fresh fruits (kiwi, strawberries, mango, etc.) for decoration
  • 1 envelope unflavored gelatin optional for firmness

Instructions

  • Crush the cookies into fine crumbs and mix with melted butter until it resembles wet sand. Press this mixture into a mold and chill in the fridge.
  • In a bowl, beat the whipped cream with sugar until it thickens and forms soft peaks, then add the cream cheese and mix until smooth.
  • If using gelatin, dissolve it according to package instructions and fold it into the mixture.
  • Pour the creamy filling over the chilled cookie base and spread it evenly. Decorate with fruits on top.
  • Chill the assembled dessert in the fridge for at least 2 hours (4 hours is ideal) before serving.

Notes

To make your Fruit Cream Delight extra special, brush a thin layer of apricot jam over the fruits before serving for a glossy finish.
It stays fresh for up to 3 days in the fridge, but avoid freezing as the texture may change. Keep fruits separate if storing for more than a day to prevent sogginess.
