Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • In a mixing bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.
  • In another bowl, cream the butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla, mixing well.
  • Gradually add the dry ingredients to the wet mixture. Stir until a smooth dough forms.
  • Chill the dough in the fridge for at least 1 hour.
  • Roll out the dough on a floured surface. Use cookie cutters to create fun shapes. Place them on a baking sheet and bake until crisp, about 8-10 minutes.
  • Cool completely before decorating.
