Ingredients

  • 3 cups wheat flour
  • 3 cups sugar
  • 4 sticks margarine
  • 4 eggs (separate whites and yolks)
  • 1 cup milk
  • 1 cup coconut milk
  • 1 tablespoon baking powder

Instructions

  • Beat the margarine and sugar together until light and fluffy.
  • Add the egg yolks one at a time, mixing well after each addition.
  • In a separate bowl, whisk together the flour and baking powder.
  • Combine the milk and coconut milk in another bowl and stir until blended.
  • Alternate adding the dry and wet ingredients to the yolk mixture, starting and ending with dry.
  • Beat the egg whites until stiff peaks form and gently fold them into the batter.
  • Pour the batter into a greased cake pan and smooth the top. Bake at 180°C (350°F) for about 30 minutes, until a toothpick comes out clean.
