Equipment

  • Mixing bowls
  • Whisk
  • Spatula
  • Loaf pan
  • Toothpick or cake tester

Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Granulated sugar
  • 1/2 cup Plain Greek yogurt
  • 1/4 cup Vegetable oil
  • 2 large Eggs (or flax eggs for a vegan version)
  • 1 teaspoon Vanilla extract
  • zest of 1 lemon (optional for a lemon version)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, mix the sugar, Greek yogurt, oil, eggs, and vanilla extract.
  • Slowly add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes until a toothpick inserted comes out clean.

Notes

Use full-fat Greek yogurt for the best texture. Don't skip the resting time; it allows the flavors to meld. Experiment with spices like cinnamon or nutmeg for a unique twist. For storage, wrap tightly in plastic wrap or an airtight container to keep fresh for up to 3 days at room temperature, or store in the fridge for a week. For freezing, slice individually and wrap each piece tightly.
