- 1/4 cup cream cheese at room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp fresh lemon juice
- 2 tsp lemon zest
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup grated coconut
- 1/4 cup white chocolate chips optional
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, beat the softened butter, cream cheese, and granulated sugar until light and fluffy.
