Ingredients

  • 1 cup sugar
  • 3 large eggs
  • 8 oz sour cream
  • 1/2 cup canola oil
  • 2 large lemons (zest)
  • 1 large lemon (juice)
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 8 oz cream cheese (softened)
  • 1/3 cup powdered sugar

Instructions

  • Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  • In a large bowl, mix the sugar, eggs, sour cream, lemon zest and juice, vanilla, and canola oil until smooth.
  • Sift the flour, baking powder, and salt into another bowl. Slowly add the dry ingredients to the wet mixture, mixing until well combined.
  • In a small bowl, mix the softened cream cheese and powdered sugar until creamy.
  • Pour half of the batter into the prepared pan. Add half of the cream cheese mixture and create swirls.
  • Cover with the remaining batter and add the remaining cream cheese mixture, making more swirls.
  • Bake for 65-70 minutes, covering with aluminum foil if the top browns too much.
  • Let cool completely before cutting.
