- 1 cup sugar
- 3 large eggs
- 8 oz sour cream
- 1/2 cup canola oil
- 2 large lemons (zest)
- 1 large lemon (juice)
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 2 1/2 tsp baking powder
- 1 tsp salt
- 8 oz cream cheese (softened)
- 1/3 cup powdered sugar
Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
In a large bowl, mix the sugar, eggs, sour cream, lemon zest and juice, vanilla, and canola oil until smooth.
Sift the flour, baking powder, and salt into another bowl. Slowly add the dry ingredients to the wet mixture, mixing until well combined.
In a small bowl, mix the softened cream cheese and powdered sugar until creamy.
Pour half of the batter into the prepared pan. Add half of the cream cheese mixture and create swirls.
Cover with the remaining batter and add the remaining cream cheese mixture, making more swirls.
Bake for 65-70 minutes, covering with aluminum foil if the top browns too much.
